We achieve the sweetness through a careful process of leaving the fruit to over ripen on the vine to raise the natural sugar levels and then we blend a small portion of early picked fruit to lift acidity ensuring the wine is well balanced and giving us a wine perfect to accompany spicy Asian dishes or for those of us who enjoys the sweeter things in life.
